Literally the Best Thing Ever: German Chocolate Cake

So as you can tell from the title, I really like German Chocolate Cake, which shouldn’t surprise you because pretty much everything I make I somehow incorporate coconut into it. But when I say this recipe is “Literally the Best Thing Ever,” believe me. Go make this. Become German (actually, did you know that German Chocolate Cake isn’t even German? Yeah, kind of like French Fries aren’t even French. I’ll explain this later in the post). And by the way, this is my go-to dessert recipe, it isn’t all that complicated and it gives insanely delicious results. So next time you have a birthday party, company coming over, or you just really want to bake a cake, make this.

There are many food hybrids. The piecaken, cronut, cookie shot, waffle taco, cinnamon roll pancakes, wonut, just to name a few. But one food hybrid that I’ve never seen is a combination of banana bread and coffee cake. So I decided to make a new trend. And here-in lies the top-secret recipe to Banana Broffee Break. Slightly Sour, Slightly Sweet: Kumquat Cardamom Pineapple Bread

Kumquat. What a funny word. And a what a funny fruit it is. If you have never seen a kumquat, (well if you finish reading this post, you will) it looks like a miniature orange. What does it taste like? Like a miniature orange! But unlike an orange, you eat the kumquats rind (or skin, or whatever you call it). Kumquats have a really interesting balance of sour and sweet that gives it a very interesting flavor profile. With this deliciously sweet and sour quick bread, I combined these deliciously different kumquats with cardamom and pineapple! This makes for a deliciously moist, sweet, sour, earthy, and spicy bread. And to top it all off (literally) there is the most beautiful bright yellow-orange, delicious sweet and tangy glaze. This recipe too easy and delicious to resist, so let’s get baking!

Easy As Cake: 4-Ingredient Chocolate Microwave Mug Cake

Sometimes you just need some chocolate. And sometimes you just need some cake. And you always need simplicity and effectiveness. And that is  exactly what this 4-Ingredient Chocolate Microwave mug Cake is: a single-serving, easy-to-make cake packed with chocolate and cooked in the microwave. This cake only takes about two minutes to whip up, and is extremely light and fluffy! Because there is no added oil or butter, this cake is slightly healthier, but also slightly less moist. I would recommend topping this mug cake with frosting, ganache, or whipped cream to add back some richness.

Love is in the Air: Red Velvet French Toast

Valentine’s Day is just around the corner, and what a better way to celebrate than to create the perfect, romantic brunch item: Red Velvet French Toast! This recipe serves one or two people, perfect for an intimate breakfast with the person you love! Of course, you can always double or triple the recipe to serve at a party. A lot of people don’t know this, but the flavor “red velvet” isn’t just vanilla with red food coloring (and no, “red” is not a flavor). “Red velvet” cake is actually a chocolate cake with vanilla, buttermilk, and red food coloring. There are many different accounts on how “red velvet” was created, but my favorite version is that back in the olden days, the cocoa powder turned a red color combined with buttermilk in a cake. This chocolate cake wasn’t brown like we know chocolate cake to be today, but red. Nowadays to recreate that red colored chocolate cake, we add in red dye for that signature bright red look.

With the Coconut Lime Piecaken and the Coconut Chocolate Chip Snack Cake with Coconut Glaze, you probably think I am coconut obsessed. And I admit: I am. Now on the topic of a Coconut Mug Cake… One great thing about this individual dessert (besides the trillion other reasons), is that it is dairy free! Using coconut milk is a great way to make dessert options dairy free and an awesome method for adding extra flavor! This little cake packs a big punch of coconut: coconut milk and shredded coconut are in the batter, and if you wish, the cake is topped with coconut whipped cream and extra shredded coconut!

Cuckoo for Coconut: Coconut Chocolate Chip Snack Cake with Coconut Glaze

There is no denying that I have a crush on coconut. Wait. Scratch that. I LOVE coconut. I should probably marry it (except that would be extremely strange). So I did the next best thing. I made a gorgeous Coconut Chocolate Chip Snack Cake with a Coconut Glaze! This cake is extremely moist and bursting with that nutty and creamy coconut flavor (as there is coconut milk and shredded coconut in the batter and flaked coconut on top) and the glaze adds even more coconut flavor! This cake is awesome to make if you have leftover coconut cream from making my Coconut-Lime Piecaken. And to make this deliciously awesome cake even better, it is ridiculously simple and quick to whip up! I think this cake is perfect for brunch, dessert, or snack, so let’s get baking and chowing!
