Another Croquembouche: Gluten and Dairy Free Coconut Macaroons

So I’m sure you noticed that the recipe for croquembouche (found here) uses a ton of egg yolks, leaving you with a ton of egg whites! What to do? Well, I found the perfect solution: make a batch of these extremely easy and quick coconut macaroons. It takes no time at all, and even little kids could whip up this recipe!

Yay! Another Gluten-Free Recipe: Matcha Microwave Mug Cake

So I’m sick. Life is just splendid. But see this dedication? I’m still blogging about mug cakes. Wow, I am such a trooper. Anyway… this is a continuation of the gluten-free mug cake thing I’m doing (should I call this a series?) for all those people in the world on a gluten-free diet. It is subtly sweet, full of the earthy flavor of matcha, and is light and spongy. Once again, even if you’re not gluten-free (like moi!) still give this one a shot! Almond-Chocolate Microwave Mug Torte (As Requested: A Gluten-Free Mug Cake!)

So a friend of mine recently went gluten-free and noticed that most of my mug cakes and other creations included some form of gluten. And did you know that 1 in 5 Americans actively include gluten-free food in their diet? So for all of you viewers out their gluten-free, this one’s for you! Even if you’re not gluten-free, I would definitely recommend making this rich, decadent, dense, and chocolatey microwave mug tort. 3-Ingredient Flourless Chocolate Microwave Mug Cake

Trust me, I know what it’s like to live with allergy restrictions. Although I don’t have any allergies, I grew up with my brother being allergic to literally everything. Nuts, tree-nuts, dairy, gluten, soy, legumes, certain shellfish and other random food items. You name it, he was allergic to it (luckily he has outgrown most of these allergies by now). Gluten-free is probably the most common allergen besides nuts, and luckily for all you gluten-free viewers out there, I have a special mug cake recipe just for you! This  flourless chocolate cake has a deep chocolate flavor that will satisfy any chocolate craving. An an additional bonus: it is by far the simplest mug cake I have ever made (it’s only three ingredients!).

A Perfect Marriage: PB&J Microwave Mug Cake

Unlike most people, PB&J doesn’t remind me of fond childhood afternoons. I never even had tried peanut butter until my teenage years. No, I wasn’t allergic, but my brother was. And no, he didn’t outgrow that allergy when I became a teenager. So why was peanut butter allowed in my house when my brother was still allergic? Well, let’s just say that those were my rebellious years (no, they actually weren’t). The real reason was that my parents weren’t afraid my brother was going to accidentally inhale a jar of peanut butter now that he was older (like that was ever likely). But anyway… let’s make the cake!
