Making a Comeback: Carrot Peach Cake with Cream Cheese Frosting

I’M BAA-AACK!!! OMG, guys, I am so, so, so sorry for not posting in like a WHOLE YEAR. (Like what is wrong with me???) There is truly no excuse for me being so inactive, but imma try anyway. You see, when I started this blog two years ago, balancing it with school was super easy, but this past year of school was way more difficult and time consuming than the year before, and I just couldn’t find the time to ever work on my blog (and if I did have time, I honestly didn’t want to work on my blog because that would entail more writing and sitting at a computer typing…) BUT, now that it’s summer, I got some time! World’s Best: Lemon Blueberry Cream Cheese Coffee Cake

I’ve had my fair share of coffee cakes. And I am 100% sure that this is the best coffee cake I’ve ever made or ever eaten. So you know this has got to be serious. Just imagine this for a second: an equal ratio of fluffy, moist lemony cake with bursting blueberries, lemony cream cheese filling, and buttery, crunchy, streusel coated with a tart lemon glaze. I mean, it really can’t get much better than that.

A Hawaiian Vacation Staple: Tropical French Toast Bake

Every year I spend one week on one of the many beautiful islands of Hawaii, and every year I make this Tropical French Toast bake! French toast bakes are so versatile and a snap to whip up. This makes it the perfect brunch dish to make on vacation since it requires few ingredients that can be purchased nearly anywhere, and can also be customized to suit your tastes or to suit what’s available in your region. Making this Tropical French Toast Bake always gets me in the Hawaiian mood, but of course each time I make it is slightly different due to what’s available! You can completely customize this recipe, of course, and can make it for any occasion, anytime, anywhere!

I’m Now A Cereal Killer: Cereal Milk Baked Donuts

What could be better than a donut? What could be better than cereal milk? Well, the marriage of the two of course! That’s right, I made some awesome Cereal Milk Donuts. And yes, donuts are a pain to make, so that’s why I prefer to make baked donuts. What are baked donuts? you may ask. The taste is very similar to cake or muffins, but it is in the shape of a cute donut! And you may also wonder, What is that ‘cereal milk’? Well, cereal milk is no other than that delicious leftover milk that is infused with all of that sugary cereal flavor that’s left over after you eat your morning bowl of cereal! So what could be better than simple to make, delicious to eat, and surprisingly different!

My Life is Finally Complete: Cream Cheese Swirl Carrot Cake Coffee Cake

Oh Carrot Cake. One of my many loves. I could consume you all day, any day. And that’s exactly why I found a way to incorporate carrot cake into breakfast. So rejoice! Today is a day of grand celebration! Let them eat cake! But seriously, this Cream Cheese Swirl Carrot Cake Coffee Cake is to die for (except if you died, you wouldn’t be able to eat it, so don’t die). It is all the flavors you love about your traditional carrot cake updated into a new format of coffee cake. In the batter, I love not just adding carrots but also throwing in heafty doses of nuts (walnuts, pecans, and almonds all work spectacularly) and coconut. Instead of the cream cheese frosting, there is a cream cheese swirl that makes this decadent breakfast cake taste like a cheesecake. And like all coffee cakes, of course it is topped off with that ubiquitous streusel!

Spicy & Sweet: Chicken Tenders with Mango Curry Sauce

I love fried chicken tenders. Last time I made chicken tenders, I went big and bold with my Chocolate Fried Chicken. This time, the fried chicken is normal, but the sauce it’s served with is out of this world fantastical! It is spicy and sweet, a jazzed up mango chutney with such an interesting flavor profile. The orange juice adds extra acidity to the store bought mango chutney, the soy sauce adds salt, the jerk seasoning adds spice and depth of flavor, the gochujang adds a spicy, funky flavor, and the lime adds acidity and brightness. This sauce is so amazing that you’ll be glad it makes more than you can dip your chicken tenders in. I mean, it truly is perfect for any application.

Perfect Any Time of Day: Deep Dish Spinach and Prosciutto Quiche with Sesame Crust

I’m a huge fan of quiche. What’s not to love? The creamy egg filling, the flaky buttery crust, and all the different combinations of add-ins make quiche one of the most versatile foods. It’s perfect for breakfast, lunch, snack, or dinner and can be eaten hot, room-temperature, or cold. My basic, go-to quiche recipe has already been posted (click here), but recently I decided I would take a bit of a risk and try out this recipe for a deep dish spinach and prosciutto quiche with a sesame crust. What intrigued me about this recipe was that there was yogurt in the custard as well as the prospect of a nutty, sesame crust. I decided to give it a go, and let me tell you, it is now one of my favorite savory recipes. Give it a try (it makes a very large quiche, so save this recipe for your next gathering)!

Literally the Best Thing Ever: German Chocolate Cake

So as you can tell from the title, I really like German Chocolate Cake, which shouldn’t surprise you because pretty much everything I make I somehow incorporate coconut into it. But when I say this recipe is “Literally the Best Thing Ever,” believe me. Go make this. Become German (actually, did you know that German Chocolate Cake isn’t even German? Yeah, kind of like French Fries aren’t even French. I’ll explain this later in the post). And by the way, this is my go-to dessert recipe, it isn’t all that complicated and it gives insanely delicious results. So next time you have a birthday party, company coming over, or you just really want to bake a cake, make this.
