The Choice Is Yours: Microwave Mug Bread Pudding

Let’s get creative! Because in this post, I’m not going to be giving you a set recipe. Yes, that is correct – you are in charge of whatever type of bread pudding you want to make. All I will do is give you a guideline for how to build your own personal cup of warm, comforting bread pudding. So let’s get to it!

Easy As Cake: 4-Ingredient Chocolate Microwave Mug Cake

Sometimes you just need some chocolate. And sometimes you just need some cake. And you always need simplicity and effectiveness. And that is  exactly what this 4-Ingredient Chocolate Microwave mug Cake is: a single-serving, easy-to-make cake packed with chocolate and cooked in the microwave. This cake only takes about two minutes to whip up, and is extremely light and fluffy! Because there is no added oil or butter, this cake is slightly healthier, but also slightly less moist. I would recommend topping this mug cake with frosting, ganache, or whipped cream to add back some richness.

Earthy, Sour, Sweet: Matcha Raspberry Almond Microwave Mug Cake

Sometimes you just feel adventurous. You just want to try something new. Vanilla, chocolate, or other safe flavors won’t do. You just want something with a perfect balance of flavors: a little earthy, a little sour, a little sweet. Well I have just the thing for you, a Matcha Raspberry Almond Microwave Mug Cake. I must say this one is exceptionally large, so I would recommend being either very hungry or sharing it with someone who’s worthy (after all, sharing is caring!).

And Now, An Individual Serving of Coconut: Coconut Microwave Mug Cake

With the Coconut Lime Piecaken and the Coconut Chocolate Chip Snack Cake with Coconut Glaze, you probably think I am coconut obsessed. And I admit: I am. But I promise this will be the last coconut post for awhile, and we will be moving on to new and different ingredients to be obsessed with! Now on the topic of a Coconut Mug Cake… One great thing about this individual dessert (besides the trillion other reasons), is that it is dairy free! Using coconut milk is a great way to make dessert options dairy free and an awesome method for adding extra flavor! This little cake packs a big punch of coconut: coconut milk and shredded coconut are in the batter, and if you wish, the cake is topped with coconut whipped cream and extra shredded coconut!

Pumpkin Spice Obsessed: Single-Serving Pumpkin Spice Microwave Cheesecake

Pumpkin spice. That’s probably the first thing I would think of if you said “fall.” Seriously, America is pumpkin spice crazy (and I am proud to admit that I am too)! Pumpkin spice everything, from the quintessential latte, to the humble bagel, to the sweet little donut, and to any and every cookie around. Pumpkin spice has contaminated everything (and yes, go to the store; I repeat: everything), and I couldn’t be happier!  But I’m going off topic. So let me swerve back on track.

We Love You Trader Joe’s: Molten Pumpkin Spice Cookie Butter Microwave Mug Cake

Just yesterday I raided Trader Joe’s of all the pumpkin foods they have for pumpkin season! And the greatest thing ever created I finally found (I know, I’m pretty behind in the world’s advances). It was like it was slow motion. The wind blew in my hair, an angelic light made my face glow. It was just me and … Pumpkin Spice Cookie Butter? Yes. Pumpkin Spice Cookie Butter. For those of you who don’t know (but I’m pretty sure you do know), Trader Joe’s cookie butter is like heaven. It is sweet, creamy and just plain dreamy. But they outdid themselves. Trader Joe’s has sprinkled that pumpkin spice magic all over their already perfect cookie butter and made it perhaps one of the best things that will ever hit your tongue. If you have ever tried the Pumpkin Spice Oreos, this cookie butter tastes legit exactly like the filling. So go. Buy it. Now. And naturally, as soon as I laid my eyes on this Pumpkin Spice Cookie Butter, the first thing that popped into my mind was “mug cake.” So here it is, Molten Pumpkin Spice Cookie Butter Microwave Mug Cake.

Mug Cakes Don’t Have To Be Savory: Completely Customizable Microwave Mug Cornbread

What? A microwave mug cake that isn’t cake? A microwave mug cake that is, in fact, cornbread??? How is this possible? Yes, it is true. And it is, like the title states, completely customizable. You can add cheese and jalapeno to make the cornbread gooey and spicy, or you can add bacon and maple syrup to create the perfect sweet-savory balance. And no matter your taste buds, I recommend adding fresh or frozen corn kernels to add a sweet pop of extra corn flavor. So what are you waiting for? Let’s make some cornbread!

Some Days Just Require Chocolate: Triple Chocolate Microwave Mug Cake

Ah, chocolate. One of the greatest inventions, alongside the wheel, the internet, and many others. Chocolate. This basic ingredient crucial for the creation of the chocolate chip cookie, molten lava cake, and of course, this microwave mug cake. But this Triple Chocolate Microwave Mug Cake, unlike the molten lava cake or chocolate soufflé, only takes three minutes to create. The results are heavenly: deep chocolate flavor, light and fluffy texture, and the perfect amount for one serving. So let’s get baking (or should I say, microwaving?)!

The color is amazing, and like all my other mug cake recipes, it is seriously a breeze to whip up! So let’s get started on this delectably fluffy and spongey, Matcha Microwave Mug Cake!
